January 2015 Detox: Day 9 (Caesar Salad, Curry, and Dandy Blend!)

I had to write again because we have been eating some amazing meals the last few days. I wanted to share them with you and give you recipes and ideas for things you can be eating if you joined us for the detox!

I have been trying some interesting recipes for breakfast. I wanted something other than greens and eggs so I made faux ‘oatmeal’ yesterday morning with coconut flour and coconut flakes.

I followed the recipe for Coconut Breakfast Porridge, and tweaked it by sweetening it with a banana, adding an extra tablespoon of coconut flour and mixing an egg into it to make it thicker. I thought it was really good and very filling.

This morning I made a dutch baby :)! It is basically a cross between a soufflé and a baked pancake. I halved the recipe for Grain Free Dutch Babies from the Unrefined Kitchen and added cinnamon. As you can tell it puffed up nicely!

I served it with some peanut butter and half a sliced banana on top. I loved it and enjoyed how it kept me full until I ate lunch 6 hours later. However, Chris was surprised by it and probably didn’t know what it was supposed to be like and wasn’t as big of a fan as I was. I think he would like it a lot better if he could cover it with butter and maple syrup. I might try making it again when we aren’t avoiding sugar and see if he likes it better with syrup. It was so easy to make and I loved it, so I hope to make it again soon!

Over the weekend, and for MLK day yesterday we ate leftovers for lunches.

Today I packed Chris some cabbage wraps with turkey, homemade mayo, mustard, and some pickled jalapeños, Along with potato salad (like I made for lunch last week), peanuts and a banana.

For myself I packed a huge salad with some leftover fish and caesar dressing on top and some coconut and peanuts as a snack. Oh my goodness. It was so good! More on the caesar dressing in a minute…

For dinner on Saturday I made curry! I love everything that is thai red curry. I found a recipe for Thai Red Curry Pumpkin Vegetable Soup from The Whole Kitchen blog 3 years ago and I have made it dozens of times since. I just use what I have around the kitchen and it always turns out delicious. This time I left out the rice, I used carrots, mushrooms, onions and fresh ginger as my base. I added the curry paste, coconut milk and some roasted kabocha squash I had on hand from my food prep day, beef broth, then I added in some chopped leftover skirt steak, cabbage, and some of the extra cilantro parsley sauce (also from my food prep day). This is my go-to soup for when friends come over for a meal and my ultimate comfort food. Seriously, using her recipe as a base and using what you have on hand, this is a winner every time!

Sunday night was another winner. I made the recipe for Caesar Dressing from the Primal Palate. Caesar salad is also another comfort food of mine. I love everything about it, but I don’t like the ingredients in commercially prepared salad dressings. The dressing was so easy to make and makes any lettuce or vegetable taste amazing :).

I made roasted spaghetti squash and spaghetti sauce to go with our caesar salad on Sunday.

Last night I made roasted fish, mashed potatoes (instead of using dairy, I used some homemade broth cubes and a little bit of coconut milk to make it creamy), and greens with onions and peppers. It was really tasty!

Tonight we had more caesar salad. I just can’t get enough of this stuff!

I pulled out the last of the chili from the freezer and we ate it for dinner. Chili is Chris’ most favorite food in the world. So I wanted to make him something he loves since he is being such a good sport doing this detox with me :).

After dinner every night we have been drinking a cup of Dandy Blend Herbal tea. It is an instant beverage made from dandelion root, chicory root, beet, and extract of barley and rye. It is completely gluten-free and caffeine free. Since we are not drinking coffee it is a really nice full-bodied beverage to end the day with and help us get through the ‘need to eat sweets’ phase after dinner :).

So that is what we have been eating the past few days. Things are going great, and I am feeling amazing. I love the variety we have been eating, and have enjoyed trying out new recipes.
