We are on our last day!! We made it two weeks without grains, dairy, all forms of sugar, and caffeine. It was tough the first week, but now it just feels normal. I am very thankful for that and it is going to determine how I eat after the detox is over. But, I am going to save my reflections for tomorrow’s post. Today I want to show you what we have been eating the last few days.

I have been experimenting with a grain-free white bean based biscuit. I have made it a couple of times, and it still needs tweaking, but I promise to post a recipe as soon as I am happy with it! We have been eating my experiments with breakfast. Wednesday morning we ate one with avocado, greens and an egg.

On Thursday I busted out the sauerkraut I made on my food prep day for the detox and have been eating it like crazy since then. I love it so much! Thursday morning’s breakfast was a white bean biscuit, avocado, 1 egg, and a scoop of sauerkraut. This breakfast seriously kept me satisfied until I ate lunch 7 hours later. Talk about the right way to start the day :).

The rest of the days I made similar breakfasts. I splurged and bought goat cheese the other day so yesterday we ate goat cheese on our greens omelette.

Lunches have been the same for both of us. I have packed some type of cabbage wrap with either turkey or fish inside, some vegetable (until Thursday I was pretty much out of groceries so I packed frozen peas), and I was out of nuts and fruit so I mashed up an extra half a banana with some peanut butter and coconut flour for a snack and pressed the balls into coconut for a snack. It tasted like a cake ball!

After grocery shopping on thursday our lunches on Friday looked a lot better. Cabbage wrap with sauerkraut, mixed nuts, fresh strawberries and blueberries, and broccoli salad. To make the broccoli salad I mixed the last of my homemade mayo with some apple cider vinegar and extra olive oil to thin it out. Then I chopped up broccoli and green onion and threw in some sunflower seeds and mixed everything together. Colorful meals make me very happy!

Yesterday Chris was at a conference and I packed his lunch, but I was home and made myself grass-fed liver and zucchini with cilantro parsley sauce and sauerkraut. I am teaching myself to like liver because it is so nutrient dense and good for me :). I can honestly say I really enjoyed my lunch. Chris would not have liked it, but I will definitely make this again for myself.

Wednesday night for dinner I made BBQ ribs with steamed green beans, skillet roasted okra and garlic, and sauerkraut. To make the BBQ sauce I mixed 1 cup of crushed tomatoes, 1/4 cup apple cider vinegar, 1 tsp garlic powder, 1 tsp onion powder, 1 T smoked paprika, and 1 T of chili powder, 1/2 tsp cayenne, and salt to taste. I poured it all over some beef ribs that I cooked in my dutch oven. I was surprised at how well it turned out. I love BBQ sauce, but not all the sugar and weird ingredients that are in all the store bought varieties. I will definitely make it again! I think it would make a great dipping sauce for sweet potato fries.
Thursday night we had beef and vegetable soup with Chris’ family! On Friday I was working late and Chris was at a conference late so we scavenged and ate leftovers for dinner when we got home.

Saturday night I made zucchini lasagna. It was so easy! I sliced 4 zucchini and salted them and let them sit for 30 minutes to sweat. While that was happening I made a sauce with the leftover crushed tomatoes that I didn’t put in the BBQ sauce, the rest of a container of blanched greens, the last of my cilantro parsley sauce (from food prep day), and the last of a container of spaghetti sauce in the fridge. I love using up leftovers to make a completely new dish!
I did 2 layers of zucchini and sauce and sprinkled on goat cheese. I baked it for an hour.

We topped it with nutritional yeast and I thought it was a very filling and satisfying meal. The only thing that could have made it better was if I had more caesar dressing to make a salad to go with it. I need to make more… Image may be NSFW.

Tonight I made soup with the rest of the veggies in my crisper drawer in the fridge and we drank dandy blend after dinner.
So, there you have it. We are done with the detox and I hope you enjoyed seeing our eats and hopefully gave you some good meal ideas! I will post tomorrow with my thoughts on the detox, Chris’ thoughts on the detox, how it has helped and how we want to eat moving forward.
